Many of you know that I don’t spend much time in the kitchen. Mostly I just use it for making coffee. When Clever Girls Collective offered me an opportunity to make a dessert, I thought it would be fun to put on chef hats with my son and create something sweet for us and my baker husband.
My rules: If I’m going to make anything, it has to be easy and it has to be fast. I like to spend my time eating desserts instead of making them. Drew (of course) has a collection of cookbooks and a binder of recipes and he mentioned one that sounded easy enough for me to try.
This is a modified frosting recipe from AllRecipes. Drew made his own notes on the printout from 2004 and I’m going to make a change of my own. I’m going to use Fudge Stripes instead of Joe-Joe’s sandwich cookies because they remind me of my childhood. I remember eating these when I visited my grandma. I would stick my finger through the circle in the middle and nibble my way around the chocolate ring. Yum.

Cookies and Cream
Ingredients
1 (8 oz) container COOL WHIP Whipped Topping, thawed
1 (3.5 oz) package of instant vanilla pudding
1 cup of milk
1 teaspoon of vanilla extract
1 banana
Cookies of your choice
Directions
In a medium bowl, combine pudding mix with milk and vanilla. Mix until smooth. Gently fold in COOL WHIP until no streaks remain.
Slice the banana into circles.
Take a few cookies of your choice and chop or break them into bite-sized pieces. Line the bottom of your serving bowls or ramekins with the cookie pieces.
Spoon the pudding/COOL WHIP mixture into the bowls.
Top with sliced bananas and garnish with half a cookie.

And just because I couldn’t imagine creating a dessert without using one of my favorite spreads, here’s another sweet treat.
Nutella Strawberry Creams
Ingredients
Graham crackers
Nutella
COOL WHIP/vanilla pudding mixture from above
Fresh strawberries
Directions
Take 2 graham crackers. Spread Nutella on one graham cracker. Spread COOL WHIP/vanilla pudding mixture on other cracker. Top one side with sliced strawberries. Press the graham crackers together and enjoy!
The desserts were super easy to put together and both of my guys loved them. I even showed Nathaniel the cookie ring trick. He still prefers shoving the entire cookie into his mouth and asking for more while pieces of chocolate tumble from his lips.
