Summer Recipe: Watermelon and Blueberry Salad with Ginger Mint Glaze

This Watermelon and Blueberry Salad with Ginger Mint Glaze is ridiculously easy to throw together, and it’s perfect for summer parties and any sort of impromptu gathering you might be hosting. A friend of mine made this and brought it to a dinner party, and everyone couldn’t stop talking about it. It has a subtle flavour but is completely addictive. I actually make this every few days just to have a healthy snack in the fridge. SO delicious.

Watermelon and Blueberry Salad with Ginger Mint Glaze

Ingredients:

Half of a watermelon

1 cup blueberries

1 tbsp grated ginger

1 tbsp sugar

Juice of a lime

1/2 cup water

2 tbsp chopped fresh mint

Directions:

Chop up your watermelon, and wash the blueberries. Place them in a bowl, cover, and refrigerate. This will chill in the fridge until your glaze is ready.

To create your glaze, place ginger, sugar, lime juice and water in a sauce pan. Bring to a boil while stirring occasionally. Reduce heat to low and simmer for 10 minutes. Pour your glaze into a small container and place in fridge. It should be cool within about an hour. You won’t have much glaze (it will seem like there’s not enough) but it will mix with the juice from the watermelon and spread throughout.

Once cooled, pour glaze over your fruit, add mint, and toss. That’s all there is to it! Feel free to add more fruit to this too, it’s wonderful with strawberries and melon as well.
