We usually end up having at least one gathering at our house during the holiday season, and we often go to several as well. An easy accompaniment for a cheese plate is a chipotle honey drizzle. This can also work as a host or hostess gift.
If you’re using this for your own party, you only need three ingredients for the drizzle: honey, pickled chipotle peppers, and oil.
Whisk together 1 cup of honey and 1/2 cup of walnut or extra virgin olive oil.
In a food processor, chop a 7 oz. can of peppers.
Mix chopped peppers with honey and olive oil. Chipotle peppers are relatively mild, but you might slowly add the chopped peppers and taste as you add more if you are not a fan of very much spice.
Drizzle over chevre or another mild, soft cheese. Serve with crackers.
If you want to give it as a gift, simply pour mixture into a decorated glass container with a secure lid. Add a pretty ribbon and a paper tag, and write the following directions: “Keep chilled. Let come to room temperature and stir before serving.”
I think this would also be lovely as a condiment on a brie and pear sandwich, or a grilled cheddar sandwich.
